High Protein Crepes - Integra Foods

Ingredients

  • 3/4 cup Pure: FABA Flour
  • 500ml milk
  • 3 large eggs
  • 1 cup plain wheat flour
  • ⅓ tsp fine table salt
  • 1 tsp vanilla essence

Method

  1. Whisk together the milk, eggs, and vanilla in a bowl or jug. Sift in the flours and salt, then whisk until smooth.
  2. Let the batter rest for 15-30 minutes to hydrate the flours.
  3. Heat a lightly greased non-stick pan over medium heat.
  4. Pour in a thin ladle of batter, swirl to coat the base and cook for 1-2 minutes until golden underneath. Flip and cook for another 30-60 seconds.
  5. Stack under a tea towel to keep warm. Serve sweet or savoury.
