High Protein Choc Chip Cookie

Ingredients

  • 80g Pure: FABA Flour

  • 20g Pure: FABA Protein

  • 150g almond flour

  • 1tsp bicarb of soda

  • 3tbsp maple syrup

  • 4tbsp coconut oil

  • 1tsp vanilla extract

  • 50g dark chocolate (vegan) roughly chopped

  • Pinch of sea salt

Method

  1. Preheat the oven to 180°C.
  2. Combine all of the dry ingredients in a large bowl and all of the wet ingredients in a smaller bowl (except the chocolate).
  3. Combine both wet and dry ingredients until the mixture begins to clump together. Fold through the chopped chocolate and use your hands to gently bring the dough together into a ball.
  4. Roll the dough into 8-10 even portions and arrange them on a lined baking tray. Press each one down lightly with the palm of your hand to form a round cookie shape.
  5. Bake for 15-20 minutes, or until lightly golden around the edges.
  6. Sprinkle with sea salt as soon as they come out of the oven and let cool for 10 minutes before serving.
