Ingredients
- ¾ cup plain (all-purpose) flour
- ¾ cup Pure: FABA Flour
- 2½ tsp baking powder
- ½ teaspoon salt
- 2 tablespoons sugar
- Zest of 1 orange
- 2 tablespoons poppy seeds
- 1¼ cups milk (any kind)
- 1 egg
- 3 tablespoons butter, melted
- 2 teaspoons vanilla extract
- Yoghurt, maple syrup and fresh fruit to serve.
Method
- In a large bowl, whisk together the plain flour, Pure: FABA Flour, baking powder, salt and sugar.
- Stir through the orange zest and poppyseeds until evenly distributed.
- In a separate bowl, whisk the milk, egg, melted butter and vanilla (if using).
- Add the wet ingredients to the dry and gently mix until just combined. The batter should be thick but pourable – don’t overmix.
- Heat a non-stick frying pan or griddle over medium heat and lightly grease.
- Spoon teaspoons of batter onto the pan and cook for 1–2 minutes, until bubbles appear on the surface. Flip and cook for another 1 minute, or until golden and cooked through.
- Transfer to a plate and repeat with remaining batter.
- Serve on a bed of yoghurt with some fresh fruit and a pour of maple syrup for a nourishing breakfast OR pack into the kids lunchboxes as mini pikelets.
