Orange & Poppy Seed Protein Pancake Bowl

Ingredients

  • ¾ cup plain (all-purpose) flour
  • ¾ cup Pure: FABA Flour
  • 2½ tsp baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • Zest of 1 orange
  • 2 tablespoons poppy seeds
  • 1¼ cups milk (any kind)
  • 1 egg
  • 3 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • Yoghurt, maple syrup and fresh fruit to serve.

Method

  1. In a large bowl, whisk together the plain flour, Pure: FABA Flour, baking powder, salt and sugar.
  2. Stir through the orange zest and poppyseeds until evenly distributed.
  3. In a separate bowl, whisk the milk, egg, melted butter and vanilla (if using).
  4. Add the wet ingredients to the dry and gently mix until just combined. The batter should be thick but pourable – don’t overmix.
  5. Heat a non-stick frying pan or griddle over medium heat and lightly grease.
  6. Spoon teaspoons of batter onto the pan and cook for 1–2 minutes, until bubbles appear on the surface. Flip and cook for another 1 minute, or until golden and cooked through.
  7. Transfer to a plate and repeat with remaining batter.
  8. Serve on a bed of yoghurt with some fresh fruit and a pour of maple syrup for a nourishing breakfast OR pack into the kids lunchboxes as mini pikelets.
