Dosa-style Flatbread/Wrap

Ingredients

  • 1 cup Pure: FABA flour
  • 1 cup gluten-free flour
  • 1 tbsp mustard seeds
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 3 to 4 cups water
  • Coconut or vegetable oil, for the pan

Method

  1. In a large bowl, combine the fava bean starch, gluten-free flour, mustard seeds, baking soda, and sea salt. Mix well.
  2. Gradually add 3 to 4 cups of water, stirring continuously, until you achieve a smooth, pourable batter. Adjust water as needed to reach the right consistency.
  3. Heat a non-stick pan or griddle over medium heat and lightly grease with coconut or vegetable oil.
  4. Pour a small amount of batter onto the hot pan and spread it into a very thin, even layer. Cook for 2-3 minutes until the edges begin to lift and the bottom is golden brown.The top should be completely dry and bubbly.
  5. Flip and cook the other side for another 1-2 minutes. Repeat with the remaining batter.
  6. Serve warm as a flatbread or dosa with your favourite curry.
