Ingredients
- 1 1/2 cups water (for mixing the coconut milk powder)
- 50g coconut milk powder
- 1 1/2 tablespoons Pure: FABA flour
- 4 sachets stevia powder
- 1 teaspoon vanilla extract
- Pinch of salt
- Zest of ¼ lemon
Method
- Mix 1 1/2 cups of water with 50g of coconut milk powder in a bowl until smooth. In a small bowl, combine 1 1/2 tablespoons of fava starch with a few tablespoons of the coconut milk mixture until smooth.
- Pour the remaining coconut milk mixture into a saucepan and heat over medium heat, stirring until it’s hot but not boiling. Slowly stir the fava starch slurry into the hot coconut milk, continuing to stir over medium-low heat for 4-5 minutes until it thickens.
- Once thickened, add the lemon zest, stevia, a pinch of salt, and vanilla extract. Stir for 1-2 more minutes.
- Remove from heat. Let it cool, then refrigerate for 2-3 hours to set.
