Ingredients
- 4 tsp flaxseed meal
- ½ cup oat milk
- ¾ cup caster sugar
- ½ cup brown sugar
- 150g vegan dark chocolate
- 100g nuttelex
- 1 cup Pure: FABA flour
- 1 tbsp cornflour
- ½ cup cocoa powder
- ¼ tsp salt
- ¼ tsp baking soda
Optional: ½ cup vegan choc chips folded into the batter before baking
Method
- Preheat the oven to 180C and line a square tin with baking paper.
- Mix ground flax and plant milk in a bowl. Let sit for 10 minutes to get all goopy (this is the egg replacement).
- Melt the chocolate and vegan butter together. Stir until smooth.
- Add sugars to the flax-milk mixture and whisk for 2 minutes until thick and bubbly. Add in the melted chocolate mixture.
- Sift in the dry ingredients, folding until combined.
- Pour the batter into the tin and spread evenly.
- Bake for 20 minutes, until slightly wobbly in the centre. Sprinkle with sea salt and serve warm.
