High Protein Fudgy Vegan Brownies

Ingredients

  • 4 tsp flaxseed meal
  • ½ cup oat milk
  • ¾ cup caster sugar
  • ½ cup brown sugar
  • 150g vegan dark chocolate
  • 100g nuttelex
  • 1 cup Pure: FABA flour
  • 1 tbsp cornflour
  • ½ cup cocoa powder
  • ¼ tsp salt
  • ¼ tsp baking soda

Optional: ½ cup vegan choc chips folded into the batter before baking

Method

  1. Preheat the oven to 180C and line a square tin with baking paper.
  2. Mix ground flax and plant milk in a bowl. Let sit for 10 minutes to get all goopy (this is the egg replacement).
  3. Melt the chocolate and vegan butter together. Stir until smooth.
  4. Add sugars to the flax-milk mixture and whisk for 2 minutes until thick and bubbly. Add in the melted chocolate mixture.
  5. Sift in the dry ingredients, folding until combined.
  6. Pour the batter into the tin and spread evenly.
  7. Bake for 20 minutes, until slightly wobbly in the centre. Sprinkle with sea salt and serve warm.
